Handling Cask Conditioned Beers
Introduction
The condition of cask beer at the time of sale will depend on the way it is handled in your cellar. When the beer is delivered the final fermentation and clarification is not yet complete. Therefore, if the beer is to be presented to the customer in consistently good condition the following procedures must be adhered to at all times.
Stillaging (Thrawling)
Wherever possible casks must be stillaged (thrawled) on delivery. Casks must be stillaged level and firmly scotched to prevent any movement. This will allow the finings and sediment to settle in the “belly” of the casks. Do not stillage casks with a forward tilt, since this will cause the sediment to collect close to the tap and may cause problems during dispense.
If insufficient space is available to stillage a cask on delivery, it should be scotched level on the floor. When space becomes available, the cask should be rolled, stillaged and re-vented to achieve best finings results.
Venting (Pegging, Spiling)
All casks should be vented on the day of delivery; ideally after two hours in the cellar to allow time for the beer to settle down. The venting procedure, together with cellar temperature control, affects the final condition and drinking qualities of the beer.
Maintain the cellar temperature between 53 to 57°F (11.5 to 14.0°C).
Before venting, always clean the shive and vent hole with water and a small brush. The sealing plug (or tut) can then be knocked through the shive into the cask with a venting tool or hard, non-porous peg without fear of contaminating the beer.
Once all the casks have been vented, replace the knocked through sealing plug with a soft, porous peg, finger tight only. The porous peg should be examined frequently for signs of working, (gas release and froth formation), and must be replaced if it shows signs of becoming blocked.
Continue to use a porous peg until strong fermentation is over, and then insert a hard non-porous peg until the beer is required for sale. Hard pegs should be inserted into the shive and tapped gently. The purpose of this is twofold; first, it prevents the remaining, naturally produced CO2 escaping from the beer in the cask, and thus maintains the sparkle and condition of the beer; second, it prevents air from entering the cask and thus minimises the risk of airborne infection.
During the period that the beer is hard pegged take the precaution of easing the peg periodically to check if excessive gas pressure has developed. If this has occurred, a few more hours under porous peg will be necessary.
All pegs should be used once only and immediately destroyed. Unused pegs should be kept clean and dry, and stored tidily in a plastic bag or container to prevent any mould growth. Both types of peg together with spare keystones, shives and tap corks are available from suppliers on request.
Tapping
Each cask should be tapped, in turn, on delivery. The keystone plug must be scrubbed with water and a small brush before tapping with a clean and sterile cask tap. Take the hard peg out and have the tap partly open when driving in so that air trapped in the tap shank is pushed out and does not bubble up through the beer causing a disturbance. The cask tap should be knocked carefully but firmly into the keystone using a rubber or wooden mallet.
Allow the cask time to settle after tapping, then sample for smell, taste and clarity.
